Ina large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon.
Combinethe eggs, milk and butter. Addto the dry ingredients
Stir in the apple, peaches and blueberries.
Pourinto an 9x13 baking dish coated with non-stick cooking spray.
Bakeuncovered at 350 for 1 hour or until a knife is inserted near the centercomes out clean.
Cutinto squares, serve with dairy free milk if desired.
Notes
I use duck eggs in place of chicken eggs due to a food allergy. If that is not an option for you, here are some other suggestions:-To replace one egg, whisk together 1 tablespoon of ground chia or flaxseeds with 3 tablespoons of water until fully absorbed and thickened.-1/4 cup mashed banana or applesauce (replaces one egg)-1/4 cup yogurt or buttermilk (replaces one egg)
