Egg Roll in a Bowl

Egg Rolls! I absolutely love them. But after discovering all of my allergies, egg rolls were one of those foods I could never have again. To say I was disappointed would be an understatement. Fast forward several years where I discovered one of my new favorites – Egg Roll in a Bowl!! Oh my goodness… it is so good! I love how it tastes exactly like an egg roll minus the fried outside. It quickly became a family favorite. I hope you enjoy this recipe!

Egg Roll in a Bowl

The yummy flavor of an egg roll in a bowl! Low carb and Gluten free.
Prep Time 15 minutes
Cook Time 15 minutes

Servings 6

Ingredients
  

  • 1 1/2 lbs ground beef
  • 1 onion, chopped
  • 1 1/2 tsp ground ginger
  • 1/2 tsp pepper
  • 4 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 cup beef broth
  • 9 cups shredded cabbage
  • 1 1/2 cups shredded carrots 2-3 carrots
  • 4 tsp gluten-free soy sauce

Instructions
 

  • Cook ground beef and onions until browned.
  • Add spices and beef broth. Stir well.
  • Add the cabbage and stir.
  • Cook stirring frequently until cabbage wilts.
  • Add carrots and cook until soft. (2-3 minutes)
  • Add soy sauce and stir.
  • Serve in a bowl and enjoy!

Notes

LaChoy is my favorite gluten-free soy sauce.
