Fruity Baked Oatmeal
Have you discovered Baked Oatmeal yet? I did several years ago and really liked the recipe I used. While I was at a Scrapbook Retreat, my friend Janette brought a Fruity Baked Oatmeal. Oh my…it was delicious!! Ever since then, this is our only Baked Oatmeal recipe we use. You are in for a treat! Enjoy.
Fruity Baked Oatmeal
A delicious oatmeal with fruit for breakfast or dinner!
Ingredients
- 6 cups gluten free quick oats
- 4 tsp baking powder
- 1 tsp ground cinnamon
- 2 cups almond milk (or other dairy free milk)
- 1 1/2 cup chopped, peeled Granny Smith apple
- 2/3 cup fresh or frozen blueberries
- 2 cups brown sugar, packed
- 2 tsp salt
- 4 eggs slightly beaten *I use duck eggs
- 1 cup dairy free butter, melted
- 2/3 cup chopped fresh or frozen peaches
Instructions
- Ina large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon.
- Combinethe eggs, milk and butter. Addto the dry ingredients
- Stir in the apple, peaches and blueberries.
- Pourinto an 9x13 baking dish coated with non-stick cooking spray.
- Bakeuncovered at 350 for 1 hour or until a knife is inserted near the centercomes out clean.
- Cutinto squares, serve with dairy free milk if desired.
Notes
I use duck eggs in place of chicken eggs due to a food allergy. If that is not an option for you, here are some other suggestions:
-To replace one egg, whisk together 1 tablespoon of ground chia or flaxseeds with 3 tablespoons of water until fully absorbed and thickened.
-1/4 cup mashed banana or applesauce (replaces one egg)
-1/4 cup yogurt or buttermilk (replaces one egg)
