Fruity Baked Oatmeal

Have you discovered Baked Oatmeal yet? I did several years ago and really liked the recipe I used. While I was at a Scrapbook Retreat, my friend Janette brought a Fruity Baked Oatmeal. Oh my…it was delicious!! Ever since then, this is our only Baked Oatmeal recipe we use. You are in for a treat! Enjoy.

  • Stir in the apple, peaches and blueberries.
  • Pourinto an 9x13 baking dish coated with non-stick cooking spray.
  • Bakeuncovered at 350 for 1 hour or until a knife is inserted near the centercomes out clean.
  • Cutinto squares, serve with dairy free milk if desired.

Notes

I use duck eggs in place of chicken eggs due to a food allergy. If that is not an option for you, here are some other suggestions:
-To replace one egg, whisk together 1 tablespoon of ground chia or flaxseeds with 3 tablespoons of water until fully absorbed and thickened.
-1/4 cup mashed banana or applesauce (replaces one egg)
-1/4 cup yogurt or buttermilk (replaces one egg)
