What’s Cooking at My House This Week
I love to eat! I mean that I really LOVE to eat. Maybe you can relate? Today, I am going to share what’s cooking at my house this week.
These past three months through a program called FASTer Way to Fat Loss, I have discovered so many delicious recipes. Not only do they taste amazing but they are really good for you too. Here is my menu for this week.
Monday- Taco Pie
Oh my! Taco Pie is so delicious. It is Low Carb and high in protein and simply amazing. The ingredients will surprise you. A few of the ingredients are eggs, heavy cream, and salsa.
In order for me to eat it with my food allergies, I replace the chicken eggs with duck eggs. I also replace the heavy cream with full-fat coconut milk and the cheese with my Manchego cheese which is considered dairy free since it is made with sheep’s milk.

Tuesday Lunch- Honey Mustard Chicken Salad with Bacon and Avocado
We generally have our Date Night on Tuesdays. Our kids eat at a friend’s house. I did make this yummy salad for my lunch though.
The chicken is really easy to make and it tastes so good. You can’t go wrong with Bacon and Avocado either. This recipe is another great Low Carb option.

Wednesday- Egg Roll in a Bowl
One thing I have really missed since my food allergies developed is Egg Rolls. So, when this recipe was shared with me, I was thrilled. An oh my… it is delicious!
Our kids all loved it too. I am excited to eat this tomorrow and make this recipe a regular part of our menu.

Thursday- Healthy BBQ Chicken Pizza with a Sweet Potato Crust
At first glance, I wasn’t too sure this recipe would be good. It sounded odd to have a Sweet Potato Crust. But, we have had it several times since I first tried it.
I am looking forward to having it on Thursday again. One tip I would give for this recipe is that if you can to bake the sweet potato ahead of time. That way it is cooled when you are ready to make the crust.

Friday- Pizza Casserole (Me Leftovers)
Pizza Casserole has been a go-to recipe for about 19 years in our family. This recipe was given to me at my Bridal Shower in 2000. It quickly became a favorite!
We have adapted the recipe just a bit. The original recipe is 1 lb. of browned hamburger. We have changed it to browned sausage because we love the taste.
I am going to have leftovers on Friday since this casserole is already in my freezer. I do make this allergy safe by using GF Sausage, GF spaghetti noodles (My Favorite GF noodles), and Manchego Cheese.

Saturday- Lazy Day Sausage Casserole
I made this meal recently and it was a winner. It was so easy to make and it tasted amazing! Saturday can’t come soon enough to have the Lazy Day Sausage Casserole again!
